Pai Mu Tan or White Peony is one of my first bags of white teas and what a lovely place to start when you don’t want the power and a punch of a black tea. Opening this up doesn’t give anything away in terms of dry aroma so the next logical step was to open up and brew away.
The dried leaves felt mixed up with stems which initially felt a tad disappointing so I brewed away to see what happens.
I boiled up the kettle and allowed the temperature to drop to around 80C so as to not to burn the leaves and left it around two and a half minutes to let the flavour come out.
Whilst deceptively looking like a green tea, the taste is very light and floral but incredibly easy to drink – a real easy going tea that may just suit those who have tried green tea but didn’t enjoy it – this could be one for you to try. It has intrigued me to want to try other white teas and I’d be interested to try a higher quality version of this with just the leaves to see if it tastes better.
All things considered a nice white tea.
